Cleaning of all kind of used Plates Manual cleaning of all kinds of used plates (lunch, snacks, crockeries, cutleries, soup cups, bowls, chaffing dishes, Trays, Trolleys, Bain Maries and any other items as per the instruction issued by the Canteen Supervisor at V.S.Bhavan Canteen including wiping with cloth etc. complete. NOTE: Cleaning material such as liquid soaps, scrubbers, etc. All consumables will be provided by the Department free of cost. Cleaning of All kind of Kitchen Vessels & Equipments. Cleaning of all kinds of kitchen vessels, milk boilers, tea containers and other kitchen equipments. Canteen is catering around 1600 persons Snacks and lunch etc. Cleaning material will be provided by the Department. Approx. number of vessels are around 100 (different capacity) and frequency is as required.

For all working days

Cleaning & wiping of Dining Tables, Chairs & floors. Clearing empty plates & cleaning and wiping of dining tables and chairs, sweeping of Dining hall area as below: No. Of Tables – 65 – Frequency as required No. Of Chairs – 225 - ----“---- Floor Area – 600 sq mt – 4 Times a day or as required. NOTE: Cleaning materials such as broom, mops, Phenyl etc. will be provided by the Canteen.

For all working day

Cleaning of kitchen floor and other utility items Cleaning of kitchen floor(400Sq.mt.) thrice a day and other utility items such as kitchen cooking range (14 burners), exhaust hood, all glass windows, freezers and wall tiles etc. and removal of wet garbage to BMC garbage bin or hostel biogas plant as required. NOTE: Cleaning materials and hand cart for removal of garbage will be provided by the canteen.

Providing counter service Providing counter service of Break-fast items, beverages, lunch items, (thali & ala cart system) evening snacks across the bain-marie(counter) for approximate 1600 patrons by deploying trained man power.

Preparation of Dosa, grilled sandwiches,omlets,juices. Preparation of various type of Dosa(masala dosa, uttappam etc.),grilled sandwiches, egg omelets, fruit juices as required for approximate 1600 patrons by deploying adequate skilled man power

Thorough cleaning of the canteen premises once in a week. Thorough cleaning of the canteen premises once in a week on each Saturdays after the pest control treatment which includes all kitchen & dining hall area (1000 sq mt) all type of kitchen equipments, dedchies, tea urns, boilers, crockery’s, cutlery’s, dining chairs, dining tables, counters etc by sterilization to remove the traces of insecticide used during the pest control.

Pre preparation work prior to next working day Pre preparation work such as grinding of dosa, idly paste, cleaning, peeling and cutting of vegetables, onions, potatoes, soaking of pulses, grating of coconuts etc. or any such job required for next day’s canteen operation
